Lazy Keto Meals 2025 Lasagna in a Soup
I’m always sharing how much I adore soup. I enjoy preparing it, savoring it, freezing it… and then reheating it to enjoy it all over again. There's never a time when I’m not craving soup – it’s the ultimate comfort food for both my body and spirit. Honestly, this blog could have been called Love and Soup, because my passion for cooking truly began with making soup every weekend.
Serves: 9
Ingredients:
- 1 zucchini noodles
- 1 lb ground beef
- ½ onion, diced
- ½ cup diced celery
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed red pepper
- 1 tsp italian seasoning
- Salt and pepper to taste
- 1 tbsp tomato paste
- 1 jar low sugar marinara
- 1.5 cup chicken broth
- 1 cup low fat ricotta cheese and/or parmesan cheese and/or pesto, optional for serving
Directions:
1. Brown the ground beef in a potuntil brown , seasoning it with salt and pepper.
2. Add chopped onion and celery, followed by the remaining seasonings – garlic powder, onion powder, crushed red pepper, and tomato paste. saute until the vegetables are fully cooked.
3. Pour in the low-sugar marinara and chicken broth, allowing the soup to thicken.
4. Add lasagna noodles and ricotta cheese, cooking for 1-2 minutes.
